Fish Sauce Eggplant

Here's the recipe:
Two medium eggplants from the food bank
Cut up into smaller pieces
Soak in salted water for an hour or two.
Then rinse.
1 lb. of Frozen ground chicken meat
Thaw
1 tsp salt
1 tsp white pepper
1 tbsp mirin
1 tbsp soy sauce
1 chopped onion
4 cloves of garlic chopped
1 tbsp dried chili flakes
2 tbsp of sugar
1 tsp salt
1 tbsp cornstarch
2 tablespoons fish sauce
1 tbsp light soy sauce
2 tsp dark soy sauce
1-1/2 cups water
2 stalks green onion cut up
1 tsp sesame oil
2 tbsp oil
Parboil the sliced eggplant. Just place it in boiling water for 2-3 minutes.
Rinse with cold water.
Heat up wok.
Place oil into wok.
After oil begin smoking add garlic and onion. Toss till a bit brown and transparent
Add ground chicken meat
Stir fry till brown
Add sliced eggplant
Stir fry
Add water
Cover
Allow to cook stirring occasionally
Add salt, sugar, light soy, dark soy
Stir and allow to cook till eggplant is soft
Add fish sauce, chili flakes
Stir in corn starch slurry to thicken sauce
Close gas
Add sesame oil and green onion
Serve with rice
